Chicken Taco Bowls
Required Ingredients
Pot Ingredients
- 1.3Kg Chicken
- 2 1/2 Cup Rice
- 4 Cups Bone Broth
- 1/4 Cup Taco seasoning
- 480g Red Enchilada Sauce
- 440g Drained Black Beans
- 340G Corn
- 1 head of Kale
- 2 Onions
- 2 Peppers
Sauce Ingredients
- 450g Greek yogurt
- 3 Tbsp Sriracha
- 2 Tbsp Lime juice
- 2 Tbsp Adobo sauce
- 2 Tbsp Honey
- 1 Tbsp Avacado oil
Directions
- Prep vegetables
- Add Chicken, Taco Seasoning, Red Enchilada Sauce, Black Beans, Corn, Peppers, Onions, and Peppers to a roast pot
- Cook at 225F for 4 hours
- Cook Rice in Bone Broth
- Make Sriracha sauce by blending yogurt, sriracha, lime juice, adobo, honey, and avacado
- Add Kale, shred Chicken
- Mix Rice into Pot
- Serve with Sriracha sauce
